The goal, after all, is communicating in English, and sometimes going "off-script" and having fun is the best way to make that communication happen. I use classic worksheets when drilling new vocabulary or grammar, but for me nothing beats using real sources like articles, videos or even movies. As someone learning a language myself, I know there's nothing better than interacting with the language as it's designed for native speakers! I started tutoring people in language and in math during my university days, and early on learned that patience is a big factor in making the student(s) learn comfortably. This comes from my experience at my secondary school where due to the high amount of cultural exchange and engagement you begin to understand that everyone has a different way of understanding things. It is also because of these experiences that I believe that the practical sessions are a little more important than the theory aspect of things. Hence I tend to put more focus on actual practicing of the speaking by having regular conversations so people are more adept to the everyday usage of the language.

As a teacher, I like to think of myself as patient and flexible. I have taught in many very different settings. The type of students in these settings varied greatly. All needed varying teaching methods in order to succeed. Flexibility was a necessary skill to be a good teacher during those times. The same thought applies to the present day.
